Chikuzenii is a traditional Japanese dish made by simmering chicken with vegetables along with mushrooms in sake, soy sauce, and mirin. It is often found eaten on special occasions such as weddings and around New Years. It is low calorie. It contains close to equal portions of chicken, potatoes, konjac, and carrots. Dried shiitake is added for umami. In restoring shiitake place in freezer for over 24 hours to prevent flavor from escaping as seen in methods using water. Sayaendo and gobou may also be used but are not required. It can be prepared in as little as 40 minutes. Preparation can be sped up by using a pressure cooker.
