Champon is a dish from China that became very popular in Japan. There are various recipes for it, but most commonly it includes Champon noodles ( which are similar to ramen), thinly sliced pork, seafood (like prawns or sliced squid), and various vegetables, such as cabbage, beansprouts, carrots, and onions. These are all fried in pig fat and then chicken or pork stock is added. According to taste, seasonings such as chili pepper, Mirin, ginger paste or Kimuchi sauce, can be added.
