Japanese-Dashi soup based made from processing Skipjack Tuna also referred to as bonito. Due to the fact that it is made using the fat of skipjack tuna, Katsuobushi is not necessarily low calorie. Finely chopped dried Katsuobushi is what is referred as Okaka which is said to taste delicious eaten with Onigiri rice balls.

Katsuobushi is made by repeatedly bowling and smoking fresh skipjack tuna. Smoked skipjack tuna is said to be a low grade from of Katsuobushi. Smoked skipjack tuna that undergoes the fermentation process is said to be high-grade Katsuobushi.

It can be bought in wood shaped blocks and is finely sliced into a flaking device prior to use in cooking.
