Daifuku is a small round Japanese cake that contains a lot of carbohydrates and calories. This dish is made from small round rice cakes filled with sweet stuffing (red azuki sweet beans or strawberries are used traditionally).

Many recipes require coating for the cakes, so they would not stick to each other. This coating is made from corn or potato starch.

Daifuku is very popular in Japan but you can find variations of this dish all over the world. Traditional preparation requires strawberries or ichigo for the filling. In America, Rice cakes are filled with fruit paste or even whole pieces. Most common fruits used are melon, banana and cherry. The rice cake itself is replaceable with white chocolate and walnut or chestnut filling, but as such, it increases the caloric value of the dish.
